Malagasy carefully craft this seasons cocoa to create a bar of intense yet smooth flavours that is sure to take your taste buds to exotic new locations. Malagasy cultivate, select, ferment and dry the Criollo, Trinitario and Forastero cocoa beans in the beautiful forested plantations of the Sambirano Valley in north west Madagascar.

The delicate flavours of the cocoa beans are dependent on the soil, sun, water and shade of the forest canopy, this changes with the seasons and from year to year. Careful nurturing and cultivation by Malagasy farmers ensures the finest beans. Malagasy has partnerships with over 800 cooperative farmers who cultivate and nurture the 6000 hectare plantation. A number of plots are already registered as Ecocert organic, and they are working to certify many more.

Unlike a lot of other chocolate bars Malagasy cocoa stays in Madagascar where it is fermented and the dried beans are transferred to the temperate Hauts Platueax, where the Ramanandraibe family carefully roast, conch for up to 72 hours, refine and temper to bring you a chocolate with notes of citrus, spice, wood and coffee that lingers on your palette. This also means that a greater proportion of the finished cost is returned to the people of Madagascar.

Although no dairy products have been used in the making of this bar it is manufactured in a factory that handles dairy ingredients.

There is around 85g of dark chocolate in this bar and it measures 16cm x 8cm.
